Evaluating Coffee (by Ian Bersten)
The flavour of wine is in every way comparable to that of coffee.
The main difference between them is that wine is served cold and coffee hot. One of the most important differences is that wine is poured from a bottle which, provided it has been well stored, has the same flavour all over the World at the same time. Coffee from the same origin has different flavours depending on the degree of roast, the dispersion of grind, the temperature of the water, the brew time, the quality of the water, the type of apparatus used, the ratio of water to coffee and how long, after preparation, it is served. A much more complex description is needed to determine just what a particular cup of coffee actually is.
